Skates and Rays are sharks that spend a lot of time lying on the ocean floor. Their pectoral fins are so greatly exaggerated they are also known as“wings”. The adaptation makes them flat so that they can blend into the sand and appear almost invisible. The edible portion of the fish, the wings, has striated white flesh with a sweet flavor and a texture that is at once delicate and meaty. Widely popular in Europe and Asia, with dishes that go beyond the French classic of skate in brown-butter sauce with capers.

The ratio between the weight of the whole fish and the fillets is 2.5 , which means that for a fish of 1 Kg, you will get around 400g of fillets.

A fish of about 1 Kg will be enough as a starter for 6 and a main course for 3 .
