Frozen Half Canadian Lobster
Spring fishing period (May, June) and Winter fishing period (December)
Our Canadian lobsters are fished from traps on the New Brunswick and Nova Scotia coasts and then supplied by our local partner. They are carefully packaged and kept in tanks to minimize their stress. During the season, our supplier import live lobsters every week and is particularly attentive to protein levels. The higher these are, the higher quality the lobster meat is. On arrival, they are once again kept in a tank so they can recuperate from their journey. Our supplier then draw on their expertise by applying their high-pressure process to the product, a process that they have patented in France and Europe.
