Presented as the cream of the crop of the PRAT-AR-COUM production, La Royale appears to be a majestic oyster.

Born from the catch of natural spats in the Roadstead of Brest (a large bay in the Finistere, France), those Creuses Speciales Oysters have been raised for at least 3 years, in the sea floor of the Aber Wrac’h, at the bottom end of Brittany, in an exceptional oysters park named “Le Grand Parc”. This plot is the perfect one for farming and refining the Royale, the result of the oyster farmer’s talent and the sweet harmony of the rich natural environment, between heaven and the bright blue sea of the Breton ocean.

With a luxuriant meat rate and a unique long finish, these jewels of the sea are a combination of sweetness and liveliness, salty, with a slight hazelnut aftertaste. The traditional way of working, strictly protected origin, and necessarily limited production justify the designation “La Royale” and Yvon Madec’s signature on this PRAT-ARCOUM oyster selection.

How many oysters and which size should I get?

From 6 to 8 oysters per person, as a starter
From 12 to 145 oysters as a main dish with additional sides
From 18 to 30 oysters per person as a main dish without additional sides

The size depends on your tastes. However European people are more likely to eat size N°3 (the favorite one for Christmas and New Year) while Asian people will go for a bigger size.

How to serve an oyster?

Start by sorting through your oysters, they all should be tightly closed. Those that are open and will not close when tapped on a hard surface need to be discarded. Open them following the following video tutorials. Remove the first water juice just after the opening which is only composed of seawater. The oyster will recreate a second one much more flavourful.  Serve the oysters immediately. Putting them on an ice bed would hide some flavors.
