Although they are raised the same way, the royal oyster will have a slight advantage by the end of her production… When she reaches 18 months, the production will be split into different beds which there will be means fewer oysters and more space in the bag.

In such a luxurious environment, she will have many different advantages: she will be free to grow as much as she wants and have a richer and more abundant diet.

Her shell will make the most of the space for developing, and her LUXURIANT FLESH will grow beautifully, and later be served on the most sumptuous of tables, prepared by the most famous chefs who will use her shell to show off their artistic talent. In our kitchen, no matter whichever way the oyster is prepared, it will still perfectly match her NOBLE CHARACTER.

All our oysters are presented in their original packaging. We don’t offer any extra service to open them.

How many oysters and which size should I get?

From 6 to 8 oysterss per person, as starter
From 12 to 145 oysters as a main dish with additional sides
From 18 to 30 oysters per person as a main dish whithout additional sides

The size depends of your own tastes. Howevern European people are more likely to eat size N°3 (the favourite one of Christmas and New Year) while Asian people will go for bigger size.


How to serve and an oyster?

Start by sorting through your oysters, they should all be closed tightly. Those that are open and will not close when tapped on a hard surface need to be discarded. Open them following the tutorial below.

Remove first the excess liquid just after the opening which is mostly seawater. The oyster will recreate a second one much more flavourful.

Serve the oysters immediately. Putting them on an ice bed would mask some of the flavours.
