The Imperial Gambas (Penaeus japonicus) is raised in oysters’ beds with a very low density (1 to 3 shrimps per m²) so they don’t need any artificial feeding, antibiotics or chemicals. They eat the natural food provided in this special environment (small crustaceans) that are not eaten by the oysters. Their moves optimises the richness of the oysters’ beds, it is a great result of species collaboration. This sweet association with the oysters will help the two of them make the most of each other’s benefits : the imperial stops the formation of seaweed and preserves the phytoplankton that the oysters need to grow. The shrimp, which feed at night, help the oyster filter the nutriments she rejects. This work protects the oyster beds during the day and the photosynthesis can take place naturally. We can talk about sustainable agriculture naturally taking place.
Delicious when cooked à la plancha, or boiled with a great mayonnaise, cooked with a sauce.
Imperial Gambas are available from July to November.
They are sold per Kilo and have no preservatives.
