This fish has been farmed in the best farms in the Scottish Lochs, which guaranties the quality of the fish and the respect of the environment.Salmon are filleted by JC DAVID in the North of France ( Boulogne). They are salted and flavoured with herbs, then smoked in a traditional way in real wood ovens. It gives toi the salmon a very specific taste. All the bones are handly removed of the fillets. The fillets are vacumm packed on a black plaque with the tail and skin on.

The JC DAVID products base their entire production on an ancestral process, completely handmade and natural, combining as in the past the fish, salt, and smoke in real wood furnaces.

Les saumons sont filetés par nos soins. Les filets sont ensuite salés au sel sec marin, puis fumés à l’ancienne dans de véritables fours à bois traditionnels. Ce savoir-faire de fumage traditionnel confère au produit un goût spécifique exceptionnel. Les filets sont ensuite désarêtés manuellement. Les bandes sont présentées sur peau et sans queue. Elles sont conditionnées sous-vide, posées sur plaque noire.Conditionné sous vide
