The diver sole has very soft but deliciously flavoured flesh. It works equally well cooked whole and as fillets and although a member of the plaice family is closer in quality to Dover Soles.
The ratio between the weight of the whole fish and the fillets is 3 , which means that for a fish of 500, you will get around 215 g of fillets.
One fish of about 500g will be enough as a starter for 2 and a main course for 1 .
