Also known as the Chinese mitten crab, the hairy crab is a medium-sized burrowing crab that is named for its furry claws, which resemble mittens. It is native to rivers and estuaries of Eastern Asia. The hairy crab is only available in the fall, starting from around late September to early October, and ending around November when it comes to maturity and migrates from its freshwater habitat toward the ocean.

The best way to eat this Chinese delicacy is simply steamed with a sauce of rice vinegar, sugar, and ginger to dip the crab in.
